smoked tofu mishmash thing



this is very delicious and very fast (and tres healthy.. mai oui), basically fast fried tofu and veggies.
you will need

a block of smoked tofu (i used couldren)
baby spinach
red peppers finely chopped
baby tomatoes cut in half
frozen sweetcorn (or fresh or canned, whatever you have)
grated ginger
hing/asafoetida
coriander powder
nutritional yeast
salt
pepper
coconut oil
lime juice
toasted seeds
how to do it
heat the oil in a frying pan, fry the hing and coriander powder then add the tofu.. fry it till it's slightly browned (it takes longer than regular tofu for some reason). add the veggies and stir it all in then put the lid on the pan. cook it all for about 2 minutes then take it off the heat. add the nutritional yeast (i used about a handful), salt and pepper and mix it in.. then put it in a bowl and add the seeds. 
i'm talking TASTE SENSATION.. seriously
